    Prepare the noodles

    Soak the rice noodles in warm water for about 20-30 minutes until softened. Drain and set aside.

    Make the sauce

    In a bowl, mix together tamarind paste, fish sauce, sugar, rice vinegar, and chili powder. Stir until the sugar dissolves and set the sauce aside.

    Cook the protein

    Heat 1 tablespoon of oil in a large wok or frying pan over medium-high heat. Add shrimp (or chicken or tofu) and cook until fully cooked. Remove and set aside.

    In the same pan, add another tablespoon of oil. Crack the eggs into the pan and scramble until just cooked.
